Sainte-Barbe, celebrated on 4 December, marks the start of the Christmas festivities! Many families sow grains of wheat in 3 small bowls covered with damp cotton wool. If the wheat grows straight, is tall, beautiful and green, it heralds prosperity and happiness for the coming year. Cups of wheat are often used to decorate the Gros Souper table and Provençal nativity scenes, as a reminder of the promise of renewal.
At the heart of these traditions is the Provençal cot. Since the 19th century, the golden age of the santon in Provence, the little figures have been modernised to depict scenes of country life, when mills, small bridges, little houses and flocks of sheep were legion. Every year, families buy a santon to add to their collection. Increasingly, local craftsmen are creating new santons, perpetuating ancestral know-how and adding to family collections.

The "Gros Souper", delicately laid on a white tablecloth decorated with three candlesticks, symbolising the Holy Trinity, and decorated with the little wheat cups of Saint Barbara, is eaten on Christmas Eve, 24 December. This culinary tradition reflects the very essence of Provençal culture. Typically, the Gros Souper begins with a series of 7 lean dishes. It varies according to family and village. This is followed by the famous custom of thirteen desserts. For some, it's unthinkable to imagine Christmas Eve without the 13 desserts! They include: pompe à huile or Gibassier, black and white nougats, the four mendiants (figs, almonds, raisins, hazelnuts or walnuts), dates, fresh fruit, calissons d'Aix-en-Provence, candied fruit (...). A real feast for the taste buds!
