Provençal Crespéou, traditional specialty from Provence

Ingredients for 4 people

  • 15 eggs (3 per omelette)
  • 100 g of spinach
  • 100 g of pitted black olives or tapenade
  • 100 g of onions, finely sliced
  • 100 g of long courgettes, grated and drained with salt
  • 100 g of tomatoes, diced
  • 1 small handful of chopped basil
  • 5 tbsp of olive oil
  • Salt & pepper

Preparation - Step by Step

  1. Sauté the vegetables. Sauté each ingredient separately in a teaspoon of olive oil: the spinach, onions, courgettes and tomatoes flavored with basil.
  2. Prepare the first omelette. Beat 3 eggs, add the spinach, season with salt and pepper, and cook in a lightly oiled pan.
  3. Cook the other omelettes. Repeat the operation for the four remaining omelettes, flavoring them one after another with olives, then courgettes, then onions, and finally tomatoes with basil.
  4. Assemble the crespéou. Stack the cooked omelettes one on top of the other, pressing them gently so they stick together.
  5. Let it rest. Allow the crespeou to cool at room temperature before slicing.
  6. Enjoy. Serve cold or warm, with a green salad or some tomato coulis for extra freshness.
