Rack of lamb with black olive tapenade

Ingredients for 4 people

  • 1 rack of lamb
  • 10 cl of white wine
  • 1 jar of black olive tapenade (210 g)
  • Salt and pepper
  • A drizzle of olive oil

Preparation - Step by Step

  1. Preheat the oven. Set your oven to 180 °C to preheat.
  2. Season the meat. Place the rack of lamb in a roasting dish, season with salt and pepper, and drizzle with olive oil.
  3. First roasting. Bake for 20 minutes at 180 °C to brown the meat.
  4. Prepare the sauce. Remove the dish from the oven, deglaze with white wine, add 25 cl of water and the jar of black olive tapenade, then mix well.
  5. Second roasting. Return to the oven for an additional 15 minutes.
  6. Serve. Slice the rack of lamb and plate it nicely. Drizzle with the tapenade sauce and serve with seasonal vegetables.
