The Moulin à Huile du Vieux Château, located in the charming village of Mérindol in Luberon, is the oldest building in the village. Built at the end of the 16th century, it stands as a living testimony to four centuries of tradition and expertise in olive oil production. For five generations, this establishment has proudly preserved the artisanal method of grinding olives with a stone mill.
