Created in 1920 by a few winemakers determined to pool their means of production, the Cave de Bonnieux was the first cooperative winery in the Vaucluse department.

Dean of cooperative wineries in Vaucluse, Borélis - Cave de Bonnieux maintains the same passion of its winemakers and the same desire to offer quality wines.
The winery has the particularity of offering two appellations: AOP Luberon and AOP Ventoux, produced on different terroirs, offering each wine typicity and character.
During the Sunsets Vignerons, the Cave de Bonnieux invites you to discover its history, its terroirs and its cuvees in a friendly atmosphere.
A cellar focused on the future and the environment
Located in the heart of the Luberon Regional Natural Park, the Cave de Bonnieux respects its environment.
In 1996, it was equipped with an autonomous station for the treatment of wine effluents, guaranteeing the absence of polluting discharge into the natural environment.
In 2011, the winery began major work with the construction of a new storage building and the renovation of its roof thanks to the installation of photovoltaic cells. This dynamic was then accompanied by a new impetus around the ISO 9001 standard.
Terroir & know-how

The privileged location of the vineyards of the Cave de Bonnieux, between Haute-Provence and the Rhône Valley, allows you to benefit from varied conditions, both in terms of soil and exposure.
The territory extends over Bonnieux and several neighboring municipalities, such as Goult, Roussillon, Lacoste or Gordes, on both sides of Calavon.
Vineyards, cherry trees and olive trees harmoniously share the landscape, in an emblematic environment of the Luberon.
Two appellations, a great diversity of terroirs
To the north, the AOP Ventoux area extends over an alternation of hills with more or less gentle slopes. The soils are varied, including the characteristic ochre sands around Roussillon.
To the south, the hillside is the preferred area of AOP Luberon. Clay-sandy soils, often in the form of terraces, come from the erosion of the cliffs of Lacoste or the Claparède plateau.
This variety, combined with the adapted and careful work of the winemakers, allows the characteristic expression of the wines of the Cave de Bonnieux.
A production between tradition and precision
The production of the Bonnieux Cave varies from 30,000 to 35,000 hectolitres depending on the year.
Whites and rosés are vinified at low temperature after settling the musts and maceration on the skin depending on the grape variety and the health condition of the grapes. The reds are made using traditional vinification, with macerations adapted to the desired profile.
Some wines are then aged for several months in the barrel cellar, located in the heart of the cellar, where the almost constant temperature guarantees optimal aging.
