All year round, every Monday morning from 8am to 1pm, Cavaillon town centre hosts its Provençal market, offering a variety of local produce, including fruit and vegetables, handicrafts, regional products and much more.

The revolutionary advances in agricultural practices of the 19th century found a favourable ecosystem in Cavaillon thanks to its age-old irrigation network, meticulously developed and maintained. Between the fertile soils stretching from the southern Luberon to the Durance, horticulture flourished spectacularly, laying the economic foundations for the town of Cavaillon. This expansion was boosted tenfold by the town's privileged connection to the PLM rail network, which began operating in 1868, facilitating rapid supplies to major cities such as Lyon and Paris.
Cavaillon's markets flourished, finding their current location on the Place du Clos from 1892, where producers and merchants gather daily. This square has become a nerve centre, surrounded by bars and cafés that have evolved into logistical bases for shipping companies. The wholesale market is held from 3am to 11am.
In 1894, productivity reached new heights, with an impressive quantity of fruit and vegetables exchanged by the buyers and sellers who frequented the market. This success continued until the middle of the 20th century. To expand the space available at the market, even the last 20 plane trees on the square were felled in 1957. Faced with this growing demand, the idea of a modern wholesale market was born, and on 18 October 1963, it became a reality. The national market took shape in 1965 on the site of the old grape market, next to the Durance racecourse, covering an area of seven hectares.
Following this transition, the Place du Clos became the site of Cavaillon's weekly Monday market, attracting nearly 200 fairground vendors. The market extends as far as Cours Bournissac and Place aux Herbes, behind the town hall, where most of the food products are concentrated.
