History and flavours at the Saint Augustin Oil Mill
Halfway between Coustellet and Les Beaumettes, on the edge of the cycle track, the Saint Augustin Mill was built in the 12th century.
The inhabitants of the time, known as the "Hermitants", made flour, wine, honey and olive oil for the builders and the monks of the Sénanque Abbey.
Despite the cessation of activities in 1945, agricultural activities continue at the Domaine du Moulin Saint Augustin.
Indeed, today in organic conversion, 12 hectares of olive trees are cultivated on the estate.
The olive oil produced on site is sold at the Moulin's shop where you will find regional delicatessen products.
We produce two oils with unique flavours:
- The Fruité Vert is made from olives picked at the beginning of their maturity, from November onwards. It is characterised by a fiery flavour at the end of the mouth with a taste reminiscent of raw artichoke.
- Fruité Mûr is an oil extracted from olives harvested at an advanced stage of ripeness, after the frosts. It has a milder flavour, with little bitterness, while retaining notes of artichoke and apple.

Practical information on Moulin à Huile Saint Augustin
Opening times and periods
From 04/01 to 24/12, daily.
May to September: 10am to 1pm and 2pm to 7pm
From 23 October 2023: the mill is open Monday to Saturday, 9am to 12pm and 2pm to 5pm.
